Grilled Pineapple Sundae Dessert Recipe


Grilled Pineapple Sundaes

1 Pineapple, peeled and cored
3 Tbsp Honey
Juice of 1 Lime
Ground Saigon cinnamon (to taste) 
Vanilla Ice Cream or Greek Yogurt
1. Slice the pineapple into ¼- to ½-inch thick rings. In a shallow nonreactive dish, combine honey, lime juice, and cinnamon. Marinate pineapple rings in the mixture for 30 – 90 minutes.
2. Preheat a charcoal or gas grill (*medium-high temperature if using gas)
3. Place pineapple rings on grates, over the hottest part of the fire, for about 3 minutes per side. 

To serve, top with a small scoop of ice cream or yogurt, drizzle with honey, and sprinkle with cinnamon.

Additional Notes: 
* I added another low glycemic fruit, an apricot to my recipe (As seen in photo).
* Pineapple contains the digestive enzyme Bromelain. 

Bromelain
- An enzyme derived from Pineapple
- The pineapple must be fresh
- Pineapple from a can is heat treated and the enzymes are killed

- Bromelain is a strong anti-inflammatory

- You can take bromelain alone, or combine with other enzymes

In enzyme formulas, the bromelain is combined with protease enzymes, that dissolve protein. When these enzymes are taken on an empty stomach, the enzymes can circulate in the body and relieve pain and inflammation, as well as help resolve scar tissue.  If you take the enzymes with a large meal, the enzymes will be used to help digest your food, so they will not be as strong.
